What an exciting day at the WTNH studio with Ryan, Teresa and my daughter Bella! Bella and her TV Studio class came in as guests to watch my cooking segment. Ryan, himself, gave them a tour making their experience extra special! It was a busy day in the studio so Bella’s class got to see a lot of action. Ryan and Teresa then invited them on camera for the finally of my segment! It was so nice to share what I do with my daughter and have her there first hand.

Zuppa di Pesce or The Feast of 7 Fishes was the theme of this cooking segment. I know we are already planning for the next holidays so wanted to share this really delicious Italian Christmas Eve tradition with you. Many families cook up a variety of fish and some have a specfic number to which there is a significant religious meaning. For example, the number 7 is the most frequently used number in the Bible, Earth was created is 7 days, there are 7 deadly sins, 7 sacraments or it could represent the 7 hills that surround Rome. Some families have 10 fishes for the 10 stations of the cross, and some have 13 fishes to represent the 12 Apostles and Jesus. What ever the number of fish you have it is supposed to serve as a lighter fare the night before the feast on Christmas day.

Serving this Zuppa di Pesce over linguine is my favorite way to eat it. It is also scrumptious served with garlic bread or sour dough toasts. Don’t get this dish confused with Cioppino. The tomato/wine sauce base is the same between the two dishes but the fish are different. Cioppino has Dungeness crab and Zuppa di Pesce has the lobster. Basically, you use what ever fish is native to your area.

You may want to try a nice light and lemony dessert like Lemon Mousse with Ginger Cookie crumble or Berries in a Dreamy Cream, Death by Chocolate Meringue Pie, Thin Mint Chocolate Mousse Pie or Saltine Christmas Bark! Enjoy & Happy Holidays!

 

 

 

Zuppa di Pesce or The Feast of 7 Fishes

Evitic Ingredients: Serves 6 -8 people

  • 2-3 lbs. mussels (or small clams)
  • 1 lb. shrimp, peeled & deveined
  • 1 lb. scallops
  • ½- ¾  lb. halibut, cod, snapper, salmon or similar cut into 2 “ cubes
  • 1/4 lb. calamari rings
  • 1 1/4 lb. pre-cooked lobster, shelled and sliced up into 1” pieces- NOTE: this is the only fish that is pre-cooked
  • 1 can chopped Snows Canned Clams
  • 1 -28 oz. can peeled whole tomatoes
  • 2 tbsp. tomato paste
  • 1 c. white wine
  • 1 c. red wine
  • 2- 8 oz. bottles clam juice
  • ½ c. finely diced Vidalia onion- 1 small onion
  • ¼ c. finely diced celery (1 stalk)
  • ¼ c. grated carrot (1 carrot)
  • 4 lg garlic cloves, smashed to sauté
  • ¼  cup olive oil
  • 1 tbsp. butter
  • 1/2 tsp salt and 1/4 tsp pepper for flavoring flour, plus ½ tsp salt to taste
  • 1 bay leaf
  • ½ c. freshly chopped parsley
  • ¼ c. chopped basil
  • ½ tsp ground, dried Italian seasonings
  • 2 tbsp. sugar
  • 1 tsp red pepper flakes or to taste
  • 1 lb. linguine pasta cooked to al-dente

Directions: Approx. 45-60 minutes to prep and cook

  1. Add 2-3 tbsp. olive oil and 1 tbsp. butter to large pot and begin to sauté crushed garlic cloves for 3 minutes
  2. Add in onion, celery and carrots and sauté until translucent approx. 7 minutes on medium heat
  3. De-glaze with 1/3 c. red wine and let reduce 1 minute
  4. Put these sautéed veggies into food processor with the whole peeled tomatoes and puree
  5. Add back to large pan with 2 tbsp. tomato paste, Italian seasonings, sugar and red pepper flakes, mix to combine
  6. Add in white wine, red wine and clam broth and bring to a simmer for 25-60 minutes on low bubbling simmer, the longer you simmer the more the developed flavor
  7. Begin to add fish to the simmering tomatoes …first the cod, simmer 2 minutes
  8. Then add in the raw shrimp, scallops, calamari and top with mussels
  9. Stir to combine before the fish begins to cook thru then…DO NOT STIR as the white flaky fish will fall apart
  10. COVER to help the steam cook all the fish
  11. Bring back to a low simmer for 3-8 minutes until all the mussels open
  12. Then add in the pre-cooked sliced lobster just to warm thru
  13. Garnish with parsley and basil and a drizzle of olive oil and serve with linguine or serve in a shallow bowl with garlic bread or slices of toasted sour dough…mmmm!

Lobster Mac & Cheese at David & Eileen’s

With this homemade gourmet lobster mac & cheese at David & Eileen’s you get the best of both worlds! Two of my very favorite things to eat all in the same dish! What more could you ask for? What, did someone say “smoked Gouda, please”? The Lobster goes with out saying and for those of you who appreciate that slightly salty, yet sweet and rich in every meaty bite know what I’m talking about. Then to add this succulent lobster to pasta that’s covered in a delicate, smokey, cheesy sauce put’s it right over the top!

When my dear friends David and Eileen suggested making lobster mac & cheese for my cooking show it was like bells went off. I thought it was a great idea. David had discussed the idea with our other foodie friend, Marco, who offered up his recipe to David. Marco and his wife, Sheryl, own an Inn near by called Lathrop Manor where Marco cooks up a five course gourmet breakfast if you’re a guest there.  Marco was also the chef in my “Salmon BLT Sliders at Marco’s Show” from this past summer. Needless to say, our group here loves to cook, eat and have fun. Even frequenting the Farm and Vine Dinner’s at The Ocean House together. 

Sharing family recipes, like Dave and Laurie did with their yummy “Caruso Salad” and the amazing lobster mac & cheese recipe between Marco and David is what brings friends together. Cooking, eating, laughing and enjoying each other’s company is the foundation of life in all cultures around the world . I am grateful to have such wonderful family and friends to do this with.

Ingredients for Lobster Mac & Cheese at David and Eileen’s:

  • 2 Lobsters – meat from 2 – 1 1/2 lb. steamed lobsters
  • 3 tbsp butter
  • 3 tbsp flour
  • 2 small onion finely chopped (1/2 cup)
  • 3 1/2 cups whole milk
  • 2 cups heavy cream
  • 1/4 cup Dry Sherry -OPTIONAL
  • 2 tsp lobster base OR Lobster SHELLS- OPTIONAL it gives a wonderful flavor to the dish… we did forget to add the base in the show and the lobster mac & cheese was still delicioso!
  • 2 bay leaves
  • 1 1/2 cups smoked Gouda
  • 1 1/2 cups white Cabot cheddar
  • 1 cup mozzarella (I added in the mozzarella)
  • 1/4 cup grated Parmesan
  • 1 lb. cellentani pasta or elbow
  • s&p
  • 2 tbsp rm temp butter for coating the baking dish

Topping Ingredients:

  • 1/4 cup panko breadcrumbs
  • 1/2 cup grated Parmesan
  • 1/4 tsp garlic granules
  • 1/4 tsp onion granules
  • 1 tbsp olive oil
  • 1 tbsp melted butter
  • 4 pieces cooked and chopped bacon – Bacon OPTIONAL  (DO NOT use Maple Flavored Bacon)

Directions for Lobster Mac & Cheese at David and Eileen’s:

  1. Per-Heat oven to 350º on CONVECTION (convection helps to toast the bread crumbs without overbaking and curdling the cheese sauce)
  2. Coat the baking dish with 2 tbsp rm temp butter and set aside
  3. Cook Pasta til firm in salted water, al-dente, 5 minutes
  4. Drain and rinse to cool pasta and set back in the same pan
  5. Melt butter in sauté pan
  6. Sauté the chopped onion until soft and translucent
  7. Add a s&p
  8. Add flour to onions to make a roux
  9. Continue on stove stirring mixture for 1 minute to cook out raw flour flavor
  10. Slowly add milk & cream to roux while continuing to whisk so as not to get lumps
  11. Add in bay leaves
  12. Cook over medium heat while stirring until sauce thickens
  13. Taste here to see if you need more salt and pepper
  14. Add in 1/4 cup Dry Sherry
  15. OPTIONAL:  Add in lobster base OR LOBSTER SHELLS and simmer for 10 minutes
  16. Remove the shells if you added them and discard
  17. Turn heat to low and add in smoked Gouda, cheddar & mozzarella while whisking for 30 seconds ONLY, then remove from heat immediately and continue to whisk until all the cheese is melted
  18. Sauce should have consistency of heavy cream
  19. Stir lobster meat into the sauce to infuse flavors
  20. Then pour lobster sauce over al-dente pasta and mix until combined
  21. Transfer to an oven safe baking dish
  22. Sprinkle in 1/4 cup Parmesan and mix gently
  23. Make the breadcrumbs by combining breadcrumbs, parmesan, onion and garlic granules, olive oil & butter and bacon
  24. Mix with your hands or a spoon and sprinkle evenly over the lobster mac & cheese
  25. Bake in a 350º oven for 25-30 minutes until slightly bubbly on the edges
  26. NOTE: DO NOT OVER BAKED OR CHEESE SAUCE WILL CURDLE!!!!
  27. NOTE: The pasta will absorb a lot of liquid in the beginning when you first mix it, AND then when you bake it, AND as it sits, AND then as it cools, so it’s a good thing to have a little extra sauce in the beginning …it will keep absorbing -you don’t want a dry lobster mac and cheese sauce 🙂

ship1They certainly know how to do king crab in South Carolina! Captain George’s Seafood Restaurant in Myrtle Beach, South Carolina has an amazing buffet of king crab legs that keeps on coming. Their buffet is pretty extensive so you need to stay focused and remember why you are there! The king crab legs are so big that it is difficult to maneuver the tongs to grab the legs and place them onto your plate. Once you get them piled onto your plate then you need to balance this antler like stack so you don’t drop them all over the floor. Knowing that once you make it back to your table you have this succulent meat to pull out of these crustaceans keeps you walking slow and steady. The king crab legs are really sweet and meaty and when you dunk them into the warm butter it just gets even better!

King crab or stone crab are a super-family of crab-like crustaceans which are generally found in cold seas. Considering king crab goes for over $30.00 a pound at most seafood markets finding a place like Captain George’s where it’s one of their specialties dishes is definitely a good thing. Not only is the crab worth going for but the centerpiece ship display and starry night sky graphics in quite impressive. If you like seafood you may just like to try my Asian shrimp and rice noodle salad, Asian salmon, mussels in a fennel-lemongrass sauce, shrimp and scallop chowder with coconut cream, sea scallop cerviche, or my sea bass with green goddess sauce. On the lighter side you could always go for my fish appetizers consisting of baked coconut shrimp, smoked salmon with a cream cheese-caper spread on crostinis, clam puffs, or sea scallops wrapped in bacon.
